how it happens

Five little steps, every single day.

It starts at half past four with a crate of berries and ends when the last tray goes out. Nothing is ever carried into tomorrow.

  1. Ingredients

    Milk from one Overberg dairy, Sicilian pistachios, Madagascan vanilla. Short list, long relationships.

  2. Fresh fruit

    Berries arrive before sunrise and are tasted, sorted, and simmered the same morning.

  3. Small batch churning

    Five-kilogram batches, churned slow and cold so the texture lands dense and silky.

  4. Handcrafted swirls

    Compotes and crumbles are folded in by hand, so every ribbon stays a ribbon.

  5. Served fresh

    Into the cabinet by ten, gone by close. We would rather run out than carry over.

Any flavour on the wall, packed into a 460 ml pint the morning it is churned and handed over in a lilac cooler bag that keeps for four hours. R145 a pint, or R890 for seven.
