It started with a burnt batch.
And the decision to never serve one.
One drum, one door, one rule.
Brewory opened in 2021 with a second-hand drum roaster, a borrowed grinder, and a rule taped above the door, nothing leaves this room that we would not drink ourselves. The first month, that rule cost us a third of everything we roasted.
It turned out to be the best marketing we never paid for. The café came a year later, the cart the year after that. The rule has not moved.

What we stand on.
Patience
Slow roasts, rested beans, three-minute steeps. Almost everything wrong with coffee comes from rushing it.
Honesty
Real farm names, real roast dates, real prices. If a batch disappoints us, you never meet it.
Ritual
Coffee is a small daily ceremony. We take the ceremony seriously and ourselves much less so.

Built for the long sit.
Some cafés turn tables. We keep them. Notebooks, first dates, hard chapters, easy Sundays, the room has seen all of it and refills quietly.
Work where it smells this good.
We hire for care, not CVs. If you have ever re-poured a drink nobody would have complained about, we should talk.
